Honeycrisp Turkey Salad
1 box shell macaroni
3 C. cooked, chopped turkey
1 cup diced celery
1 Tbsp. diced onion 3 C. chopped Honeycrisp apples
1-1/2 to 2 cups Miracle Whip
1 Tbsp. white sugar
1 cup chopped pecans
Place cooked and cooled macaroni, turkey, celery,
onion and apples in large bowl. Stir gently. Mix Miracle Whip and
sugar together and fold into macaroni and turkey mixture. Chill
for at least 1 hour. Fold in pecans right before serving.
Hint: Roast a bone-in turkey breast for this salad.
Chicken is also good. For an even quicker recipe, use a rotisserie
chicken from the grocery store.
Janine's Apple Cake with Caramel Sauce
4 cups grated Haralson apples
2 eggs
2 Teaspoons cinnamon
1/2 cup vegetable oil 1/2 cups pecans (optional)
2 cups flour
1 teaspoon salt
2 teaspoons baking soda
Put apples in mixing bowl. Break eggs over apples
& stir. Add sugar, cinnamon, oil, & flour. Beat until creamy.
Bake in a greased 9 x 13 pan 45 to 60 minutes at 350 degrees
Caramel Sauce
1 cup packed brown sugar
1 cup white sugar
1 cup whipping cream (do not whip)
1 cup butter
2 Tablespoons flour
2 teaspoons vanilla
Place all in a saucepan, Boil 1 minute. Serve over squares of cooled
apple cake.
Frozen Waldorf Salad
1/2 cup sugar
1/2 cup pineapple juice
1/4 cup fresh lemon juice
1/8 teaspoon salt
1/2 cup celery
1/2 cup mini marshmallows 1/2 cup seedless grapes, halved
1/2 cup crushed pineapple, drained
3 Honeycrisp apples, diced
1/2 cup pecans, broken
1-1/3 cup whipping cream, whipped
Combine sugar, juices and salt in small saucepan.
Cook on medium heat, stirring until thick. Cool; then stir in everything
except whipped cream. Gently fold in whipped cream. Put in 8"x8"
pan. Freeze. Thaw 5 minutes before cutting into squares. Garnish
with maraschino cherry and sweetened whipped cream.
Crunch-Topped Apple Crisp
1 cup melted butter
1 box yellow cake mix
2/3 cup brown sugar
12 apples, chopped 1-1/2 cups quick oatmeal
1/2 cup granulated sugar
3 Tbsp. cinnamon
Pre-heat oven to 350°. In a large bowl, combine
cinnamon and white sugar. Mix with chopped apples. Layer apples
in a 9"x13" pan. Using the same bowl, stir together the
cake mix, brown sugar and oatmeal. Pour the melted butter into the
bowl and stir with dry ingredients. Spoon mixture over apples and
bake for 45 minutes to one hour.
